Healthy vegan Mapo tofu. \nOlive oil spray to coat the wok or the skillet \n1 diced yellow onion\n1 block soft or firm tofu (cut in cubes if it\'s firm)\n1 garlic minced\n1c chopped mushrooms-optional \n1/4 c Korean BBQ sauce (or more)\nred pepper to taste\n2 tsp ground flax seed\ngarnish- chopped green onion and sesame seed\n1. Saute garlic and diced onion until soft.\n2. add the mushrooms, then tofu and cook for 3-4 minutes.\n3. Pour the BBQ sauce and cook at medium heat for 3-5minutes. \n4. Serve into a bowl and garnish with green onions, sesame seed, & fax seed. \n\nEnjoy it with rice!
